So how do I deal with the bye week for my tight end/kicker/defense
Do I just let it ride and take the hit on their nonexistent production since this is a keeper league?
How does the waiver thing work?
How do trades work, I've been solicited a couple of times now and I don't even know what/how to respond, regardless of whether or not I can determine if I want to participate.

Unless you have Gates/Witten/Clark, drop your TE and pick another one. Same for DEF and K (no K/DEF/TE is worth a keeper spot).
Always attempt to fill one of your roster spots with someone not on a bye.
Waiver wire: on Sunday @ 1, every player that is currently a FA goes on the waiver wire. If you want a player out there, you make a claim on him through your drop/add screen.
If no one else attempts to claim him, he's yours on Wed.
If someone else does put a claim out there, the computer looks at waiver priority to determine who gets him (initially, this was reverse draft order). Once you've made a successful claim, you move to the back of the line. Currently you're second in the waiver priority.
Trades: at the top of your team screen, you should see that you have a pending trade. Click the link to review it, then decide whether to accept or reject it.

I agree with Sidekick...unless you've got a one of a kind defense/kicker/TE you drop them. Sadly, for you, Antonio Gates is that so don't drop him. Baltimore Defense might be, too, but ask around.
Also, the context of my trade offer changed since Wes Welker can plan. Run it by someone but understand that when I offered it to you it was so I could take all the injury risk. Something veterans know is that the Patriots don't disclose injuries so when one of their players misses a few games he really could be gone for months.
One more thing to the rook:
You're a little too concerned about the keeper status. Keepers are reserved for surprise break out stars and you have two: Cedric Benson and Jerricho Cotchery. I wouldn't worry much about anyone else unless except Hakim Nicks, maybe.
Here's why: you got Antonio Gates in the 4th round (I think). If you keep him he'll be your 2nd round pick next year. But he's almost certainly available in the 3rd round, a full round higher than he was this year. And really, does it matter? You won't drop him this year because he's a stud.
The other problem with worrying about keepers is you neglect the waiver wire. Weeks 2-5 are when you get a surprise stud off the waiver wire. If you're concerned with your keepers then you aren't looking hard enough on the waiver wire.
Case study: Sims-Walker. maybe a good pick up, maybe not. but why not roll the dice on him rather than an aging, unproductive WR like Lavereance Coles? Drop Coles and he'll still be on the waiver wire in two weeks when Sims-Walker washes out. So what if you can't keep Coles next year? The man is 32 and next year is unlikely to better for him.

Tray I noticed that veiled attempt to have T-Bone drop Gates.
So my suggestion is the following for each of the K/TE/DEF scenarios.
Kicker - You always drop the kicker on a bye. The difference between the #1 kicker and #10 kicker is negligible and really is basically based on matchup and how well an offense does moving the ball down the field but stalling in the redzone. Kickers in the NFL are basically automatic from 40 in, and the opportunity for big field goals are small. In actuality I drop and choose the best kicker matchup every week. Tynes just has happened to be a great matchup each time.
TE - Just like SK said those special TE's (I would include Gonzo too) you don't drop and drop a WR or RB who isn't doing well and no one else will pick up in the bye week either because well there is very little point if they don't play. So drop a WR and pick up the best matchup TE, because in a 10 team league there are only 10-15 TE's on rosters, leaving the other half of the league available. Odds are decent you'll find a good matchup. Do not drop Gates.
Defense - This may be the toughest one. While the difference between the #1 D and #10 D isn't that much. The #20 D is dangerous and Matchup is everything when it comes to Defense. Would I want to use any Defense playing the Saints right now? No. You'll get no points for point total and sacks and INTs will be at a minimum. However, a Defense that regardless of points allowed always gets sacks and turnovers (See - Minnesota) is always the best pick. So checkout matchups and review the stats if you have time and you should be good to go.
